    Hunting Knives
A hunting knife is a fixed blade sized for field dressing, skinning, and quartering game, and the right one depends on which part of that work you do most. A skinner with a deep belly is suited to separating hide from muscle, while a caper gives you more control for detailed work around the head. Our hunting knives are hand-forged, most of them in Damascus steel, the material we forge daily and also supply as bars and blanks to other makers. Every listing gives the blade length, steel, tang construction, handle material, and sheath, so you can match a blade to the game you process. If you're building a hunting kit rather than choosing one knife, combining different blade shapes can cover body work, detailed cutting, and other processing tasks. Shop Hunting Knives Choose by the job: Skinner knives: a curved belly for lifting hide off muscle Gut hook knives: a hooked spine for opening the abdomen without piercing the paunch Caper knives: a short, fine point for the head and cape Drop point knives: a strong, controllable tip for general field work Trailing point knives: an upswept tip and long belly for slicing Clip point knives: a thinner, keener point for piercing Tracker knives: heavy multi-zone blades for camp and survival work What Makes a Knife a Hunting Knife? A hunting knife is a knife built for processing game rather than general cutting. Many hunting knives are fixed blades with compact-to-medium blade lengths, secure handles, and sheaths for carry. Full-tang construction is common among fixed-blade models, but the right configuration depends on the knife and intended use. Those features follow from the work. Hunting happens in cold, wet, bloody conditions, often far from anywhere you could repair or replace a tool, so a hunting blade needs to hold an edge through a whole animal and survive being knocked about in a pack. What Hunting Knives Are Used For Hunting knives are used across four stages of processing an animal: Field dressing Opening the abdominal cavity and removing the organs. A controlled tip matters most here, which is why gut hooks exist. Skinning Separating hide from muscle. A curved belly does this in long strokes with less risk of cutting through the hide. Caping Removing the hide from the head and neck for a mount, which needs a short blade and a fine point. Quartering and butchering Breaking the carcass into carryable pieces and removing meat from bone, where a stiffer blade earns its place. Knives for hunting aren't the right tool for everything in camp. Prying joints apart, splitting the pelvis, and chopping wood will damage a thin edge, so keep a bone saw and an axe for those. Blade Length and Shape Blade length is the first decision, and shorter is usually better than longer. A small hunting knife of 3 to 3.5 inches gives the most control for detail work and field dressing on deer-sized game. Around 3.5 to 4.5 inches is the general-purpose range that handles skinning and quartering without feeling unwieldy. Five inches and above suits elk, moose, and heavier work, at the cost of control in tight spaces. Shape decides behaviour. More belly means better skinning; a finer point means better piercing and detail work; a dropped tip means more strength and less chance of accidental punctures. That trade-off is why the collections above exist, rather than one knife trying to do everything. Fixed Blade or Folding? Fixed blades dominate hunting for good reasons: nothing to fail under load, no pivot to trap blood and hair, and far easier to clean thoroughly after a messy job. Hunting pocket knives still have a place. They're lighter, carry discreetly, and suit small game, birds, and hunters who already carry other tools. If that's what you're after, our folding knives cover lock types and carry options. What Separates Quality Hunting Knives Four things, and none of them are visible in a photograph. Tang construction A full tang runs the steel through the whole handle, which matters when you lean on a blade to part a joint. Steel and heat treatment High-carbon steel takes a fine edge and sharpens quickly in the field, though it needs oiling to prevent rust. Stainless resists corrosion from blood and rain with less attention. Either way, it's the heat treatment that decides whether the edge holds, which is why hardness is worth checking on a listing. Handle security A handle that's comfortable in a shop can be slick with blood and fat. Texture, a finger guard, and a shape that fills the hand matter more than looks. Sheath retention A knife that falls out of its sheath while you're climbing or dragging is lost. Look for a snug fit with a strap or snap. High-quality hunting knives state all four on the listing. Ours do, and where a spec isn't listed, ask, and we'll tell you. Building a Hunting Kit Most hunters carry more than one blade, because no single shape does every stage well. For deer-sized game, a drop point of about 4 inches plus a small caper covers almost everything. Add a gut hook if you want a controlled opening cut, or choose a drop point that already has one. For elk and larger animals, a longer skinner with a deep belly moves more hide per stroke, and a stiffer blade helps with quartering. For trophies, a caper is not optional. The hide around the eyes, lips, and ears is where a mount is won or lost, and a full-size blade can't do that work. A traditional hunting knife in wood, bone, or stag with a leather sheath suits hunters who want the look as well as the function; the same patterns appear in our cowboy and ranch knives. Caring for a Hunting Blade in the Field Blood and fat are acidic, and they start corroding steel within hours. Clean the blade as soon as you can, dry it completely, and pay attention to the joint where the blade meets the handle, since that's where moisture sits. Carry a small ceramic rod or diamond stone. An edge that's still cutting is worth more mid-field than a perfect edge at home, and a few strokes between stages keeps the knife working through a whole animal. Don't store the knife in a leather sheath. Leather holds moisture against steel and will spot a carbon blade within weeks.
